Don't we all love a break from a busy day? and with a cup of coffee the break does seem worth it all doesn't it? Why not have a break with a coffee cookie? sounds perfect right. These yum crunchy cookies with a lovely coffee chocolate flavour in every bite is sure a great way to treat yourself. I used Kelloggs honey & almond to roll the cookie dough and they turned so crunch that I couldn't stop myself from having two instantly. Make these for kids/ adults and they will enjoy it. You can skip coffee powder in case you are not a coffee lover and enjoy. I find cookies are so easy to make compared to cakes which involves a few extra process. Nevertheless I do enjoy every bit of baking and the best bit is watching your loved ones enjoy what they eat :-)
Chocolate Cornflakes Cookies is a no-egg recipe and is simple to do, if you are a beginner in baking this are perfect to learn and have a success at baking. The texture of the cookies is crunchy on the outside and soft inside. Every bite gives the lovely flavour of coffee and chocolate which instantly can excite you. Now lets move on to the recipe.

Makes - 8 medium-small cookies
Prep time - 5 mins
Bake time - 18-20 mins
Ingredients
Maida - 1/2 cup
Powdered sugar - 1/2 cup
Cocoa powder - 2 tbsp
Coffee powder(instant) - 1 tsp
Baking powder - 1/4 tsp
Vanilla extract - 1 tsp
Unsalted butter softened - 1/4 cup
Milk/ Thick cream - 1 tbsp
Cornflakes - 1/2 cup crushed (i used Kelloggs honey & almond)
Method
1. Pre-heat oven to 180 C/ 350 F, take 2 bowls mix flour, cocoa, coffee, baking powder in one and set aside.
2. In another bowl mix butter and powdered sugar until light and creamy. Now add vanilla extract and combine well. Prepare a baking tray with parchment/ butter paper and set aside.
3. Now add the flour mixture to the creamed butter and combine well. Add the cream/ milk to combine and form the dough into balls. Using a 1 tbsp measuring spoon form balls, roll on the crushed cornflakes and place on the parchment tray
4. Repeat the same for the remaining cookie dough, bake in center of oven for 18-20 minutes and remove, let the cookies cool down on a cooling rack.
Serve along with a cuppa coffee/ milk and store excess cookies in an air-tight container

Tip 1
Adding coffee powder is totally optional but it enhances the flavour and also the colour in the cookies
Tip 2
You can roll the cookie dough on chopped nuts too instead of cornflakes
Tip 3
I used cream to combine the dough you can add only milk
Tip 4
You can make the same cookies by skipping cocoa and adding maida/flour instead
